If you're running too hot you're burning off the flux and you solder doesn't flow properly plus it's much easier to delaminate PCBs and stress tiny legs too much and rip them off. If you have a controllable powerful iron with heating element inside the tip you can keep the tempature at an ideal level and will always obtain the best results with the least amount of work.
